- mezze maniche (pasta): 400 gr.
- tomato sauce: 400 gr.
- eggplant: 1
- zucchini: 2
- chili pepper
- fresh basil
Wash and grate the zucchini and eggplant.Saute a clove of garlic in a skillet with a little olive oil.
Add the eggplant and zucchini grated, and then join some chopped onion. Season with salt and pepper. Add some oil and a dash of water and cook covered for 10 minutes.Then put the tomato sauce, some chili pepper and half a teaspoon of curry.
Cook the pasta to the tooth and season it with the sauce.
Serve with fresh basil.
