- penne (pasta): 400 gr.
- artichokes: 5
- red onion: 1
- carrots: 3
- potato: 1
- garlic: 2 cloves
- white wine: 1 cup
- olive oil: half a cup
- parsley: 1 sprig
- hot chili pepper: 1 teaspoon
Clean the artichokes, peel the potato, wash the carrots and peel the garlic.
Cut all vegetables into small pieces and boil them in water previously brought to the boil.
Whisk all pieces, add the red hot chili pepper and cook with olive oil and salt for 10 minutes, adding a little at a time the wine.
Cook the pasta for less time than indicated and drain it, add it to the artichoke sauce and stir for a few minutes.
Before serving sprinkle the dish with finely chopped parsley.
