Pumpkin patties

Pumpkin patties– pumpkin: 600 gr.
– breadcrumbs: 200 gr.
– olive oil or peanut oil
– egg: 1
– nutmeg
– hot chili pepper
– parsley
– salt

 

Clean and cut the pumpkin into cubes.
Add the chopped parsley, salt and hot chili pepper. Bake for about 20 minutes in a pan with a few of olive oil and very little water, then blend the mixture and allow to cool.
Mix the egg and breadcrumbs. The dough should be firm, not too soft nor too hard. Add salt and nutmeg. Form with your hands the patties and dip them in breadcrumbs. Bake in a preheated oven at 200 degrees for about 20 minutes or fry in a pan full of olive oil.
Serve alone or accompanied by a cream of porcini mushrooms.
