Pumpkin plumcake

Pumpkin plumcake– pumpkin pulp: 300 gr.
– flour durum wheat: 150 gr.
– eggs: 3
– olive oil: half a cup
– red onion: 1
– flakes of hot chili pepper
– salt

 

Dice the pumpkin and onion, cook in a nonstick pan with a tablespoon of olive oil until it all to dry.
Cool down the mixture into a bowl and add the beaten eggs before, the remaining olive oil, the hot chili pepper, salt, and finally, little by little, the sifted flour. Mix all ingredients, place the dough into a pan with a mold and bake at 200 degrees for about 40 minutes.
Serve hot accompanied by a cream of porcini mushrooms or peppers.
