Rice croquettes (Arancini)

Rice croquettes (Arancini)– rice: 700 gr.
– mozzarella cheese: 200 gr.
– butter: 100 gr.
– peas: 100 gr.
– Parmigiano cheese: 50 gr.
– salami: 50 gr.
– eggs: 4
– breadcrumbs
– broth

 

Cook rice in broth and remove from heat when it is cooked. Add the beaten eggs, butter and Parmigiano cheese. Allow cooling for about three hours.
In a pan brown a little bit of onion with the peas. Form small balls with the cold rice and place in the center salami, peas and small pieces of mozzarella cheese. Dip in breadcrumbs and cook in hot oil.
Serve.
