Tiramisu with strawberries

– strawberries: 300 gr.
– mascarpone cheese: 250 gr.
– packs of Pavesini (biscuits): 5 or 6
– tablespoons of sugar: 5
– eggs: 3

 


Wash the strawberries and put 5 or 6 of them aside to garnish the tiramisu at the end.
Mix the others with two tablespoons of sugar, beat the egg yolks with 3 tablespoons of sugar and add the mascarpone cheese then.
Cream all, then whip the egg whites until joining the mascarpone cheese cream and turning gently with a spoon.
On a medium-size tray place, the Pavesini passed in the strawberry cream and so create the first layer.
Then make a layer of mascarpone cheese cream and then another layer of Pavesini yet. Keep up alternating layers of Pavesini soaked in strawberry cream with layers of mascarpone cheese cream.
Finish by inserting a layer of mascarpone cheese cream.
Garnish with the strawberries set aside and serve.
